Cheesy Baked Fries Recipe

A cleaner take on cheesy fries
Baked, not deep-fried — and built on a thick 11mm cut that holds its shape under cheese without going soft. A great share plate for cafes, pubs, and home dinners.
Ingredients (serves 3–4)
- 600g The Nilgiri Root Classic Cut 11mm fries
- 150g mozzarella, grated
- 50g cheddar, grated
- 2 tbsp olive oil
- 1 tsp Italian herbs
- 1/2 tsp black pepper
- 1/4 tsp paprika
- 2 tbsp chopped chives or spring onion
Method
- Pre-heat the oven to 220°C (200°C fan).
- Spread the fries in a single layer on a lined tray. Drizzle with olive oil and dust with herbs, pepper and paprika.
- Bake for 18–22 minutes, turning once, until crisp and golden.
- Push the fries together, scatter mozzarella and cheddar over the top.
- Return to the oven for 3–4 minutes, until the cheese is fully melted and just blistered.
- Finish with chives and serve straight from the tray.
Serving suggestion
Serve with a side of marinara or chipotle mayo. For a heartier plate, top with cooked bacon or jalapeños before the cheese goes in.
