Masala Loaded Fries Recipe

A loaded fry with real Indian character
This is comfort food with attitude — crisp 10mm fries layered with warm masala, fresh onion, coriander and a generous chutney drizzle. Built for cafes, but easy enough for a Sunday at home.

- 2 tbsp tamarind chutney
- 1 tsp chaat masala
- 1/2 tsp red chilli powder
- 1/4 tsp roasted cumin powder
- A handful of fresh coriander
- 2 tbsp sev (optional)
- A squeeze of lime
Method
- Cook the fries straight from the freezer per pack instructions until deep golden.
- Tip onto a warm plate and immediately dust with chaat masala, chilli powder and cumin.
- Scatter onion and tomato across the top.
- Drizzle with green and tamarind chutneys.
- Finish with coriander, sev and a squeeze of lime.
Serving suggestion
Serve in a paper-lined cast iron skillet with extra chutneys on the side. Eat immediately — the contrast of hot, cold, crisp and soft is the whole point.
